Apple curd cheese cake


When autumn makes its way into the kitchen from the fields, gardens, orchards, and forests in its wonderful warm nuances, the abundance of the summer crops is replaced by crates and crates of apples. Nowadays, when fruit and vegetables can be imported from all over the world, we can count ourselves fortunate if we know which apple tree the apples grew on, which we eat fresh or with just a pinch of aromatic cinnamon, lemon peel, and vanilla in popular autumn desserts.

In a nearby orchard, on a farm, and at producers of dairy products in the Cerkno region you will find all the main ingredients needed to whip up an apple curd cheese cake. The recipe was shared with us by chef Tomaž Škvarč Lisjak. If you aren’t planning on baking it by yourself, you can occasionally taste this dessert drizzled with a vanilla sauce at Hotel Cerkno or at the Alpska Perla restaurant. We tried the apple curd cheese cake at its debut and confirm that it is excellent. We wish you successful baking and bon appetit!


  • 4 eggs
  • 9 large spoons sugar
  • 9 large spoons oil
  • 7 large spoons flour
  • 8 large spoons milk
  • 1/2 baking powder
  • rum (to taste)


Mix the sugar, egg yolks, oil, flour, milk, baking powder, and rum. At the end fold in the beaten egg whites slowly. Pour the mixture in a round baking tray covered with parchment paper.

Apple filling

  • 3 medium-sized apples
  • grated lemon peel
  • 6 large spoons sugar
  • a pinch of cinnamon
  • lemon juice


Melt the sugar into caramel. Add the peeled and coarsely chopped apples, grated lemon peel, and a pinch of cinnamon (to taste). Braise everything quickly, so that the caramel dissolves. Add lemon juice and let it cool.

Curd cheese filling

  • 1/2 kg curd cheese
  • 7 large spoons sour cream
  • 3 eggs
  • 1 vanilla pudding (powder)
  • 2 packets vanilla sugar
  • 5 large spoons sugar
  • grated lemon peel


Mix the curd cheese, eggs, sour cream, vanilla pudding, vanilla sugar, sugar, and lemon peel until you get a nice, smooth mass. Pour the mass on top of the biscuit layer. Start pouring from the center of the baking tray out. Before putting the cake into the pre-heated oven, put the braised apples on top of the curd cheese cream. Bake for one hour at 170 degrees Celsius.
